This cookie cake is so simple and delicious! You can use any of the Southern Roots Sisters cookie mixes to make this easy and delicious cake! I used a 10" cast iron skillet for this cake, but you could use a 9-11" cast iron as long as you adjust cooking time by a minute or two as needed.
Ingredients

Chocolate Chip Cookie Mix

1 egg

1 tsp vanilla

4 tablespoons unsalted butter room temperature

1 c powdered sugar

1/2 tsp vanilla

Pinch of salt

1-3 tsp milk or water as needed

Food coloring optional
Buttercream Icing
Directions
Cookie Cake
Preheat the oven to 350F
Follow instructions on Southern Roots Sisters cookie mix to prepare cookie dough.
Place dough into cast iron skillet and press down evenly with your fingers or rubber spatula until smoothed evenly all over.
Bake for 20 minutes until the top is just slightly golden brown. Do not over bake - it will still be very soft when you pull it out but will harden as it cools. Allow to cool for 30 minutes before icing.
Icing
Using a hand mixer, mix together softened butter, powdered sugar, salt, vanilla, and 1 tsp at a time of your milk or water. Blend until smooth and add 1tsp at a time of liquid as needed until desired consistency. Add food coloring and use piping bag to apply.
