Ingredients

1 3/4 c all purpose flour

1/2 c confectioner's sugar

1/2 tsp salt

2 sticks unsalted butter, chilled and cut into very small pieces

1 tsp ice water

1/4 c toasted and chopped very fine pecans (optional)

2 8 oz packages cream cheese, softened

1/2 c sugar

1 tsp vanilla extract

2 large eggs beaten

Directions
Preheat oven to 350F. Grease a 9x13" baking dish.
Place dry ingredients and pecans in a food processor and pulse. Add butter and process until the dough begins to form a ball, adding the water as necessary.
Add dough to the bottom of the baking dish. Bake in oven until crust is lightly golden, about 20 minutes. Allow to cool for 30 minutes.
While cooling, prepare the filling. Mix softened cream cheese, sugar, and vanilla until well blended. Then add eggs and mix just until incorporated to avoid adding too much air into the mixture.
Pour cheesecake filling over the cooled cookie crust. Spoon jam randomly on top of the cream cheese mixture, then swirl with a knife until desired pattern and evenly distributed.
Bake for approximately 35-45 minutes or until center is set. Allow to cool in pan, serve, and enjoy!
